As our integrated supply chain has grown, we have expanded our product offering to include beef sourced from the traditional British cattle breeds. Our Heritage Hallmark beef animals are all grass-fed on pastures, hills and dales throughout England’s most rural counties, under the watchful eye of our trusted family farmers.
These breeds are renowned for their outstanding eating qualities; the exceptionally distinct and deep flavour profile is created by the slow maturation rate of the cattle and the intramuscular fat otherwise known as marbling. They are typically suited to some of the UK’s areas of outstanding natural beauty and as such, the income of these animals is particularly important for smaller farming communities.
We are committed to supporting the heritage breeds, promoting their indulgent eating qualities, and bringing a point of difference to the consumer, in order to preserve our rarer, native cattle for years to come.
Our Heritage cattle are slowly reared to the highest welfare standards using traditional agricultural methods which have been passed down through generations of family farmers. Nutrient rich, grass-reared beef offers additional health benefits such as greater Omega 3, Vitamin A and multiple micronutrients which emanate from a healthy life in the field.
Sourced with the consumer’s needs in mind and served internationally and domestically at Michelin starred restaurants, our Heritage Hallmark beef is hand-selected as per customer specification. Driven by our focus of exceptionally high-quality product and service, we also offer weekly dry aging and supply all cuts, both bone in and boneless and all offal.
